Poolside burgers with chips & salsa

Memorial Day weekend was the start to summer and with June right around the corner, we're officially into pool season, so let's grill some lamb burgers, cool off with some chips and salsa, and stay hydrated with a spicy watermelon mocktail.

Grocery list

Meat

  • 2 lb ground meat — 60% lamb / 40% beef (for 6 burger patties)
  • 4 oz pancetta (for the blueberry glaze — sub a tbsp neutral oil if you'd rather skip)

Produce

  • 3 lemons (zest 1, juice the others for arugula + glaze)
  • 3 limes (1 for salsa, 2 for mocktail + glasses)
  • 1 navel orange (for salsa)
  • Small watermelon — about 3 cups cubed (for mocktail)
  • 2 jalapeños (for salsa)
  • 1 head garlic (3 cloves for salsa, 1 for glaze)
  • 2 shallots (1 each for salsa + glaze)
  • Small bunch cilantro
  • 5 oz bag arugula

Dairy

  • 8 oz log goat cheese
  • Small carton heavy cream (just a splash for the spread)
  • 1 stick butter (1 tbsp for the glaze; rest is on hand)

Pantry

  • 2 (12 oz) cans fire-roasted tomatoes
  • Balsamic vinegar (1/4 cup for glaze)
  • Honey (small jar — glaze + mocktail)
  • Pickled jalapeños (small jar — 1 tsp puree for mocktail)
  • Tajín (for the mocktail glass rims)
  • 3 (12 oz) bottles sparkling mineral water
  • Olive oil, salt & pepper (on hand)

Frozen

  • Small bag frozen blueberries (1 cup for glaze)

Bakery

  • 6 potato buns
